Focus On: A Weight Watchers-Friendly Recipe - Apple Cinnamon Muffins

I made these apple cinnamon muffins recently and they are to die for, so I had to share.  Plus they're only 4 points on Weight Watchers, so I'm a happy camper.  Sometimes you need those carbs!

Apple Cinnamon Muffins


1 1/2 cups all-purpose flour

1/2 cup brown sugar

1/4 cup white sugar

1/2 tsp sale

2 tsp baking powder

1 tsp cinnamon

1/6 cup applesauce

1/6 cup vegetable oil

1 egg

1/3 cup milk

2 apples, peeled, cored and chopped



1/2 cup brown sugar

1/3 cup flour

1/4 cup butter, softened (or half-melted from the microwave like I did)

1 1/2 tsp cinnamon


1.  Preheat oven to 400F.  Grease 17 muffin cups (I know, right?) or line with paper muffin liners. 

2.  Stir together flour, sugars, salt, baking powder and 1 tsp cinnamon.  Mix in oil, egg and milk.  At this point the batter feels like thick peanut butter.  Hang in there and mix in the apples.  Ah, better.  Spoon that batter into the muffin cups - but only 2/3 full or you'll regret it!

3. In a small bowl, stir together sugar, flour, butter and cinnamon for topping.  Mix together with fork and sprinkle over unbaked muffins.  (Skip this step for additional calorie-saving... although I didn't.)

4.  Bake in preheated oven for 20 - 25 minutes, or until a toothpick inserted into center of muffin comes out clean.
